Local Wahoo Tiradito, Infused Coconut Water, Avocado Pearl and Spiced Pumpkin Puree with Cayman Sea Salt Chef Frederice Morineau - The Ritz-Carlton, Grand Cayman
Directions: Slice the snapper filet as thinly as possible and lay out directly on the plate. Keep refrigerated until service. Peel the zest of the lime, lemon and orange and infuse it in the coconut water for 30 minutes at low heat then cool it down right away. Roast the pumpkin rubbed previously with all the spices at 120 Fahrenheit for 2 hours or until soft. Cook for 10 more minutes into a pot with the coconut water, blend and season to taste.
Make small pearl (ball) using a tiny vegetable scoop out of the Avocado. Take the plate with snapper out of the fridge , place small dot of pumpkin puree, add the avocado pearl , finally drop a little of the coconut water and season to taste with Cayman Sea Salt only !
